The fourth Co.op Organic Cooking Show organised by the Saigon Union of Trading Co-operatives (Saigon Co.op) introduced to thousands of customers unique dishes made from Co.op Organic products as part of a series of activities to promote such products.

Besides talking about the benefits that Co.op Organic products bring to consumers, renowned Vietnamese culinary expert Nguyen Dzoan Cam Van also shared cooking secrets she has accumulated over more than 30 years.

For that and for her witty manner, she received many plaudits from the audience.

The audience was particularly interested in two novel dishes she made: ‘bipolar shaped rice’ (rice decorated like yin and yang) and ‘unicorn’ steamed fish (steamed fish decorated like unicorn).

The two dishes are not difficult to cook but are very beautiful and fancy and are considered auspicious foods to eat on the New Year.

In the ‘bipolar rice’ dish, the chef used spinacia oleracea and fresh gac fruit to achieve the green and red colours respectively. She used very little oil to cook the dish and used cucumber and carrot to make the two poles.

This ‘feng shui’ dish means harmony and good fortune in the new year.

‘Unicorn’ steamed fish was decorated beautifully by carving cucumber into the shape of a carp. While the fish’s body and scales were created from basa fish fillet, bell pepper of various colours and oakwood mushrooms.

The dish, which means “fish becoming dragon,” and “everything to be improved in the new year,” is especially preferred by families because it is also easy to cook.

All these delicious dishes were made from Co.op Organic fruits and vegetables and fish that meet USDA (the US Department of Agriculture) and EU organic standards.

They are exclusively sold at seven Co.opmart and Co.opXtra supermarkets in HCM City. — VNS
