When delicious dishes touch the heart
The “Five Elements” dining space was impressive last fireworks season under your management. What were your thoughts after its resounding success?
During the 2017 fireworks season, myself and my crew created a unique and attractive dining space for Đà Nẵng’s residents and visitors. We did not just make delicious food, but we also gave everyone the opportunity to learn about the culinary culture of Việt Nam and the rest of the world, through delicious and interesting dishes.
As a chef, I am honoured when my dishes are honoured, but it was more important that the Five Elements dining space provided other exciting entertainment experiences. For the Four Seasons dining space during the 2018 fireworks season, we expect to do even better.
Managing a “culinary stage” for four months provided many memorable experiences, what is the memory that you remember the most?
Nothing makes me more emotional and happy when the food we make are warmly welcomed. The Five Elements dining space truly acquired a place the heart of the people and visitors to Đà Nẵng, which is reflected in the large number of visitors that come every day to enjoy the food and play in the dining space. Some say that this “culinary project” is the best investment that I have ever made, so when it became the most attractive destination during the international fireworks season in 2017, I felt extremely happy.

The Five Elements was a great success, so for the 2018 fireworks season, what will you do that will be new and different? And which dishes will you highlight this year?
Under the theme of “Four Seasons,” I expect the design of the dining space to be different and close to the culinary culture of the people of Đà Nẵng. Therefore, we aim to make the hotpot and barbeque this year’s culinary highlight. I believe that visitors will feel more than satisfied with this delicious food.
We will also create many other delicious dishes under the theme, “Four Seasons,” and will organise many fun activities during the festival, such as exciting games and dance shows with local and international dancers. This year’s dining space will surely be an endless experience.
How has the theme, “Four Seasons,” inspired the design of your dining space?
Overwhelmed with natural colours of the four seasons, spring, summer, autumn and winter will be the themes of this year's design. It will be a fresh spring with the vibrant colours of flowers, pictures of small forests with rabbits roaming around. Summer will be brilliant with images of blue seas and cool white sand. Autumn will be romantic under yellow maple leaves and a couple of squirrels. Winter will be covered in snow with polar bears, ice, snowflakes and festive Christmas parties.
In this space with four beautiful seasons, the dishes from various regions will be attractive. Spring will see Japanese dishes and lightly-coloured cakes, ice cream and soft drinks. Summer will have grilled and savoury European dishes. Autumn will bring yellow-coloured rice dishes and specialties from three regions. And dishes such as fragrant noodles and hotpots will illustrate warm winter cuisine. We want to give tourists and the people of Đà Nẵng a sample of the rich and colourful art of Việt Nam and the rest of the world.
In this year’s special dining space, visitors can also interact with chefs and experience fun activities. I hope the “Four Seasons” dining space will be the most attractive event in Đà Nẵng this summer, contributing to the success of the Đà Nẵng International Fireworks Festival (DIFF) 2018.
The organisers of DIFF 2018 are known to be very strict in selecting programmes and events. Does this place a lot of pressure on you?
I also do not want to be repetitive for this year's culinary space. The culinary arts require as much creativity as other arts, so myself and my team spent two months planning the Four Seasons dining space.
Surprising visitors in the most attractive dining space ever will put us under the most pressure, so our food will not be there to just be eaten, but they will also be works of art to enjoy.
